Kukicha or twig tea, also known as bōcha is a blend made of stems, stalks, and twigs. It is available as a green tea or in more oxidised processing. Kukicha has a unique flavour and aroma among teas, due to its being composed of parts of the tea plant that are excluded from most other teas. Because stems naturally have less caffeine than tea leaves, twig tea generally has less caffeine than regular green tea without any industrial decaffeination. Kukicha is a particular green tea speciality with a strong, sweetish taste. The mild coffee note reminds a little of dark chocolate. Despite its characteristic appearance, its taste is discreet and thus makes it an enjoyable experience. It is suitable both during the day and in the evening.
Green varieties are best steeped for less than one minute (oversteeping or steeping too hot, as with all green teas, will result in a bitter, unsavoury brew). It is common to steep Kukicha for three or four infusions. Regular Kukicha material comes from production of Sencha or Matcha Tea.

Kukicha how to brew? Here are several tips for you to get the most from your Kukicha Tea:
Use 0.5 - 1 teaspoon per cup, infuser, filter or teapot. Switch the kettle off, before water boils (about 80oC). Add the hot, but not boiling, water and infuse for about 1 minute. Remove leaves and steams from water to ensure infusion remains smooth not bitter.

Tea can be used repeatedly until the flavour of the tea is exhausted

Using hot water to pre-warm your cup and utensils for brewing not only clears away any dirt or flavors from previous teas brewed, but it also keeps the tea at an ideal temperature.
Washing or rinsing your tea leaves before brewing can remove any impurities so that you can enjoy the pure authentic flavor of the tea.
